Preservatives are antioxidants and have always been used in the food and drug industry to prolong the shelf-life of manufactured foods and processed vegetables / dairy products / seafood / meat / poultry.  Antioxidants work by scavenging free radicals that can cause oxidative damage to electron rich species such as lipids and DNA and arrest fermentation or molecular break-down process.
